Quinoa is taking over the world! And not just because I love it and is grown locally.
You knew that, right? Quinoa (pronounced KEEN-wah, if you weren’t sure, it’s OK, we all went through that phase, it was scary!) is very good for you and it has a cool name, and in the past few years it’s been stealthily integrating itself into the mainstream and popping up pretty much everywhere.
But it shouldn’t just be relegated to a SIDE dish, no sir. Let quinoa lead the way into a brave new world of texture and complete proteins, at any and all times of day. Here are some ideas to get you started on your path to enlightenment.
For breakfast:
Quinoa, Fruit, and Nut Bars
Hot quinoa cereal
Quinoa pancakes
Quinoa fruit bread
GRANOLA!
Lunch :
Add quinoa to pretty much anything
Sweet potato salad with pomegranates
Tabouleh
Pesto with fresh veggies
Turn it into black bean and quinoa sliders
Other fun stuff:
Taterless Tots
Quinoa and thyme hashbrowns
Quinoa meatloaf
Quinoa crusted chicken
Buffalo cheddar quinoa bites
Quinoa and eggplant parmesan
Quinoa chili!
